I love this salad.
I could eat it every day.
And sometimes I do.
The beauty of it is that you can add almost anything to the base recipe.
1/2 a head of - Red leaf lettuce, green leaf lettuce, or roman lettuce chopped into smaller pieces
4 slices of slightly thick provolone cheese -just thick enough to cut into small pieces
3 slices genoa salami -same thickness as the cheese- cut into small pieces
1/8 lb sliced turkey - sandwich thickness- chopped
1/4 a cucumber chopped
grape tomatoes
fresh basil about 4 big leaves - chopped
pepper
parmesan cheese
balsamic vinegar
olive oil*
Place the everything in a bowl and sprinkle lightly with the parmesan cheese and pepper. Slowly drizzle about 2 Tablespoons of balsamic vinegar and 1 Tablespoon of olive oil* onto the salad and toss. Taste. Add more balsamic vinegar if necessary.
Eat and Enjoy!
*I personally don't use olive oil- just the balsamic, but some people like it.
If you are making a large batch to eat later keep the veggies - meats/cheese - and dressing separate. Combine in the eating bowl to keep things from getting soggy.
